Downtown Allentown's The Hamilton District is the place to be. Between fifth and 12th street you can find unique stores such assembly 88, which has menswear for the modern, confident male. There are also a lot of restaurants and breweries (Allentown Brew Works for one) that range from higher-end fare to gourmet burgers. Perfect for late afternoon shopping and then dinner and drinks at Bell Hall, which has a huge outdoor eating area and a knife juggling bartender. 

Lehigh Valley's city of Easton and small towns like Emmaus are full of fantastic finds in outfitter shops, boutiques, and locally owned stores. And stores and galleries in Bethlehem like those on Main Street and the SouthSide are worth the trip alone with one-of-kind shopping experiences ranging from unique home décor items at Domaci, Seasons Olive Oils, and fine jewelry. Be sure to stop in the Moravian Book Shop, the oldest continuously-operating bookstore in the world.
