Vegan White Chocolate Cranberry Cookies

1/3 cup Earth Balance (Vegan Butter Spread), softened
½ cup Brown Sugar, packed
1/3 cup Sugar
1 Tbsp. Flax Meal
3 Tbsp. Warm Water
1 tsp. Vanilla Extract
1 ½ cup All-Purpose Flour
½ tsp. Salt
½ tsp. Baking Powder
¾ cup Dried Cranberries
½ cup White Chocolate Chips

In a large bowl, cream the Earth Balance and sugars until they are light and fluffy. Mix the flax, water and vanilla in a small bowl, then blend into the creamed sugar. In a separate large bowl; mix flour, salt & baking powder until well combined. Add the flour mixture in three stages to the creamed sugar, scraping the bowl between each addition. Finally, fold in the cranberries and white chocolate chips. Weigh out to 1 oz. cookies. Place on a baking sheet and cook for 8 - 0 minutes or golden brown in a preheated 375°F oven.
