Cinnamon Shortbread Cookies

Cinnamon Shortbread Cookies


1/2 c. Butter (softened)
1 c. Sugar
4 Eggs (beaten)
2 c. Flour
2 tsp. Baking Powder
1/4 tsp. Salt
2 tsp. Cinnamon
1 tsp. Vanilla


Beat eggs, adding vanilla slowly in a small bowl. Mix sugar and butter in a large separate bowl. Combine remainder of dry ingredients in a separate bowl. Then, mix the dry ingredients with the sugar/butter mixture (do not over mix). Next, combine all, and mix until incorporated (do not over mix).

Shape into a log, the diameter of a quarter. Chill 30 minutes. Slice 1/2 inch sections, place on sheet pan and depress slightly with your thumb. Bake 10 minutes at 400 degrees.
