I've heard the theory that you should eat your main meal of the day at lunch and have lighter fare in the evening. I really hope that's true because I've had some substantial lunches in Lehigh Valley recently.
Tuesday I attended the Women's Business Council's monthly luncheon held at Green Pond Country Club. I tried to be selective in the buffet line, just taking the salad, salmon and chicken along with some mixed veggies. I'm not sure how the ice cream that was set in front of me disappeared.
Yesterday while exhibiting at the Business to Business Expo held by the Whitehall Area Chamber of Commerce and the Nazareth Area Chamber of Commmerce at the Westgate Mall I lunched on Royal Gourmet's famous pulled pork sandwiches. No, that's not a typo - I had more than one of them. Tonight I really need to hit the gym!
Now that I think of it, having a big lunch actually does have advantages. Many of the Valley's restaurants offer great selections often at a fraction of the cost of their dinner entrees. For example, earlier in the month I visited the State Cafe & Grill in Easton and had a fabulous Caesar salad with grilled tuna steak (pictured) and it was only $12.95! I was dining alone, but Juan and Melanie, the owners made me feel right at home in their comfortably chic restaurant.
I think this weekend Don and I should go on a date...a lunch date. Do you ever make lunch your main meal of the day?
