Chef Tim Dunning’s beer-washed aged cheddar, raspberry compote, prosciutto  (For the Cheddar, we bought raw milk locally, and our Chef Tim is making it in-house.  Same with the prosciutto!  We sourced an all-natural leg of pork from Country Time in December, and cured it at the Brew Works)
